- Preheat the oven to 425˚F. (You can skip this step if you are using a small toaster oven that has a convection bake feature.)
- Put the potato on a chopping board, flat side down. Start from one end of the potato, cut almost all the way through, at about 3 to 4 mm intervals. Put potato on baking sheet.
- Mince garlic and stuff between the slices.
- Drizzle olive oil (or you can use melted butter) on the potato and sprinkle salt & pepper.
- Bake for 35-40 minutes.
- Mince parsley or basil and add on top as garnish
